The Federal emergency management agency, commonly referred to as FEMA, is responsible for the federal government’s role in preparation for, prevention of, mitigation of the effects of, response to, and recovery from all domestic disasters, whether natural or man-made. Its structure has evolved over 200 years, from a simple Congressional Act in 1803 to the current labyrinth of five “mission area frameworks” and 32 core capabilities.

When a Presidential disaster declaration is made, FEMA activates various response, communications and coordination capabilities under the National Response Framework. These include mass sheltering and feeding; debris clearing, water delivery, road restoration, power recovery, and incident management.

NPR recommends that FEMA improve its service to customers by developing clear criteria for disaster declarations, increasing state and local incentives to mitigate losses, and introducing performance measures into grant awards for mitigation and preparedness. These improvements will help reduce the federal cost of disasters, and improve the quality of disaster relief efforts.

Centers for disease control and prevention

The Centers for Disease Control and Prevention is a United States government agency that generates strategic information and puts science and advanced technology to work to protect the health of the public. It works around the world in collaboration with ministries of health, preventing diseases and responding quickly when emergencies occur.

The CDC is part of the Department of Health and Human Services, headquartered in Atlanta, Georgia. Founded in 1946 as the Communicable Disease Center, it was originally tasked with fighting malaria and other infectious diseases, but its mission has expanded to include health promotion, disease control, and mitigating threats from bioterrorism.

The CDC is often the first to respond when international health crises break out. For example, it helped Haiti’s public health ministry combat cholera in the aftermath of the 2010 earthquake. CDC staff also deploy to countries during emergencies to train local public health workers and implement strategies such as contact tracing. The CDC has four coordinating centers and two coordinating offices.

Kimchi

The Korean condiment kimchi is a fermented vegetable dish that’s nutrient-rich and chockful of probiotics. It’s a staple in both North and South Korea. This tangy food has been around for thousands of years and was one of the first culinary traditions to be recorded. It’s also been linked to gastrointestinal health, such as reduced inflammation and improved gut bacteria balance.

There are hundreds of variations of kimchi, but the most common ingredients are napa cabbage and Korean radish. It is usually seasoned with salt, gochugaru, spring onions, garlic, ginger, and jeotgal. It is then packed tightly into containers to minimize air exposure and encourage brine formation.

Historically, kimchi served as a way to preserve vegetables for the winter months when they were scarce. Families would gather to process hundreds of cabbages and turn them into a food that would last for months, even up to a year. It was a way of life for many people and it helped them survive long periods of poverty.
